3 cups grated or sliced zucchini
1/2 cup chopped onion
1/2 cup cheddar
1/2 cup oil
1 cup bisquick
4 eggs
seasonings:salt pepper, garlic, parsley
bake in pie pan 30 minutes at 350 degrees.
This salad is delicious! We had it at a picnic a few weeks ago. I used boston bib and green leaf lettuce, strawberries, cucumber, feta, walnuts and "Brianna's" vinagrette. It is really tasty. Just the right amount of sweet, savory and crunch. My kids ate 2-3 bowls each! I managed to have one.
My dear friend CK knows my daily struggle to avoid the baked sweets that show up in the office everyday. So tomorrow I have these healthy muffins to share. As a hot cereal, it was a hard swallow but with apples, grated carrot, etc. they are more edible.
